Winemaker’s notes:
The wine is named after a centuries old fortress Kara Karmen (Black Fortress in Turkic) in present day Ochakiv. Kara Karmen wine is made in the appassimento style – berries are dried for months before crushing, giving the wine a more intense flavour. Fermentation took place in open vertical oak barrels. Wine has aged more than 24 months in American oak barrels.

Characteristics:
A truly unique wine. On the nose and palate you will distinguish figs in chocolate, cherries with rum, truffles, noble anise and a little smoke — numerous flavours can be found in this wine. Kara Karmen has a pleasant tartness, sweetness and rich in colour.

Food pairing:
Kara Karmen pairs well with venison, beef short ribs, braised beef, rich stews and beef stroganoff. Serving temperature: 16-18°C/60-64F.

Beykush Winery:
Beykush Winery, the most award-winning winery in Ukraine, is lying on 11-hectare plot on the Beykush peninsula of the Black Sea. It is surrounded by the sea on three sides, which works as a great natural air conditioner, softening the climate in dry years, and the wind reduces significantly the risk of fungal vine diseases. There are mostly French and Italian grape varieties, but also some experimental vineyards with Alvarinho, Timorasso and Tempranillo, Pinotage and local Telti-Kuruk.

Mykolaiv region:
Mykolaiv wine region has vineyards of 15 thousand ha. It belongs to the wider Black Sea Wine region which is made up of Odessa, Kherson and Mykolaiv itself. The climate in the region is warm in the summer and mild in the winter. Warm and moderately humid autumn enables the normal development and ripeness of grapes and dry periods before harvesting allow to obtain high-quality grapes.
